Bunny Chow

About the Recipe

Often referred to as a 'bunny' is a proudly South African meal. It is a hollowed out half loaf of bread filled with mouth-watering curry.

Ingredients

  • 1kg Lamb Pieces, cubed steak, cubed chicken fillets or mince.

  • Oil to cover the base of the pot

  • 2 cinnamon sticks

  • 2 bay leaves

  • 6 cardamom pods

  • 4 cloves

  • Sprig of curry leaves

  • some crushed green chillies

  • 1 large onion, finely chopped

  • 1/2 tsp tumeric

  • 1 tsbp of ginger 

  • 2 crushed garlic cloves

  • 1 tbsp white wine vinegar

  • 2 tsp sugar

  • 3 level tsp ROBERTSON'S RAJAH CURRY POWDER

  • 2 tsp cumin powder

  • 1 tsp garam masala

  • 1 tin chopped tomatoes

  • 5 medium potatoes, quartered

  • freshly chopped coriander

  • salt and pepper to taste

Preparation

  1.  Heat oil in a pot.

  2.  Add cinnamon, cardamom, cloves and bay leaves into the pot and stir.

  3.  Add the curry leaves, chillies, onion, tumeric, ginger and garlic.

  4. Add garam masala and other spices into the pot. Add the vinegar and sugar. Mix well.

  5. Add the meat, salt and pepper. Stir until the meat is coated in spice.

  6. Cover the pot and cook on medium heat for a few minutes.

  7. Stir from time to time until the meat is well braised and then add the potatoes.

  8. Add water as needed as the curry will need to be quite saucy.

  9. When potatoes are almost cooked, add the tomatoes.

  10. When the potatoes are soft, add the coriander.

  11. Hollow out a quarter or half loaf of bread and fill with curry. Enjoy by dunking bread in the curry.
