About the Recipe

Malva pudding really is a South African classic! This is a sweet, caramelised, spongy pudding served with a creamy sauce. It is really easy to make and uses all standard pantry ingredients.

Ingredients

  • 200g sugar

  • 2 eggs

  • 1 tbsp ALL GOLD SUPER FINE APRICOT JAM

  • 1 tsp bicarbonate of soda

  • pinch of salt

  • 15g of butter

  • 1 tsp vinegar

  • 100ml milk


      For the sauce:

  • 200ml cream

  • 100g unsalted butter

  • 150g sugar 

  • 100ml hot water

Preparation

Step 1

Preheat oven to 180°C. Beat the sugar and eggs well in a food processor until thick and creamy, and add the jam.


Step 2

Sieve together the flour, bicarbonate of soda and salt in a seperate bowl.


Step 3

Melt the butter and add the vinegar. Add this butter/vinegar mixture and the milk to the egg mixture. Then slowly add the flour. Mix until well combined. Bake in a covered oven-proof dish for the 45 minutes.


Step 4

Melt together the ingredients for the sauce and then pour them over the pudding as it comes out the oven. Serve with a dollop of freshly whipped cream, custard or a scoop of vanilla ice cream.
