Best made the day before, a Peppermint Crisp Tart is an easy way to impress your guests- that's if you're willing to share of course! It's a smooth, creamy, caramel dessert that has burst of mint and chocolate. Definitely a South African classic.
2 packets of TENNIS BISCUITS
2 tins CARNATION CARAMEL condensed milk
500 ml fresh cream (double cream or whipping cream)
3 grated PEPERMINT CRISP chocolates
Place a layer of whole tennis biscuits in a rectangular or square dish. (use a smaller dish if you want to make more layers)
Whip cream until thick. Add caramel and mix until combined.
Spoon some of the caramel mixture over the biscuits to cover completely. Sprinkle some of the grated chocolate over caramel mixture.
Repeat with layering biscuits, caramel and grated chocolate until finished, ending with the caramel that is sprinkled with the remaining chocolate.
Place in fridge to set for a few hours. For best results set overnight if you can. Serve with a dollop of whipped cream or scoop of vanilla ice cream.
