About the Recipe
With just one bite you are transported to South Africa. A crispy outside and fluffy inside is sure to make you go back for more. It can be enjoyed warm or cold, sweet or savoury and at home or as 'padkos' for a long journey!
Ingredients
1kg flour
2 tsp salt
30ml sugar
2 tsp instant dry yeast
30ml cooking oil
500ml lukewarm water
Preparation
Step 1:
Sift the flour and salt together. Add sugar and yeast.
Step 2:
Add oil and enough lukewarm water, cut in with a knife and mix to a soft, sticky dough. Add more water, if necessary.
Step 3:
Turn out dough onto a lightly floured surface and knead for 5-10 mins, or until dough is smooth and elastic. Place dough in a large, lightly oiled bowl, cover and leave to rise in a warm place for about 30 minutes, or until doubled in size.
Step 4:
Knock down dough on a lightly floured surface and knead until smooth. Divide into 20 pieces and roll into smooth balls. Place onto greased baking trays. Cover and leave to rise in a warm place for about 15 minutes or until balls of dough are well risen.
Step 5:
Heat oil in a medium, heavy-based saucepan. Make sure that the oil is not too hot. Gently drop dough balls, in batches, into hot oil. Turn constantly and deep fry until cooked through and golden brown. Remove from oil and drain on paper towel.
Serve with butter, cheese, jam or go traditional with savoury mince.
